VEGGIE PASTA SALAD
 

 

4 servings, about 1½ cups each

INGREDIENTS

 1 (8 ounces) package pasta, cooked according to package instructions, and drained

2 cups chopped broccoli, cooked and drained

1 cup garbanzo beans, cooked and drained

½ cup cubed or shredded reduced-fat or regular cheddar cheese

1 clove garlic, minced or 1/8 teaspoon garlic powder

1 tomato, diced

½-1 cup low-fat Italian vinaigrette salad dressing, as desired

 

WHAT TO DO

1. In a bowl, mix all ingredients together.

2. Cool in refrigerator until ready to serve.

3. To serve, top salad with cheddar cheese.
