CHERRY CHIP SCONES
 

Makes 8 scones

 

INGREDIENTS:

3 cups all-purpose flour

1/2 cup sugar

2-1/2 teaspoons baking powder

1/2 teaspoon baking soda

6 tablespoons cold butter

1 cup (8 oz.) vanilla yoghurt

1/4 cup plus 2 tablespoons milk, divided

1-1/3 cups dried cherries

2/3 cup vanilla or white chips

 

WHAT TO DO:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine flour, sugar, baking powder and baking soda.

3. Cut in butter until the mixture resembles coarse crumbs.

4. Combine yoghurt and 1/4 cup milk. Sitr into crumb mixture just until moistened.

5. Knead in the cherries and chips.

6. On a greased baking sheet, pat the dough into a 9-inch circle.

7. Cut into eight wedges. Separate wedges. Brush with remaining milk.

8. Bake for 20-25 minutes or until golden brown. Serve warm.
