Chimichurri Steak

We’re continuing our trip around the world today with a trip to Argentina! Today we’ll make an easy sauce that is a perfect compliment (and most popular condiment) for grilled steak, the most popular dish in Argentina. Serve with roasted potatoes for a truly authentic Argentinean experience!

Ingredients

  • 3/4 cup fresh flat-leaf parsley
  • 1/4 cup packed cilantro
  • 3 garlic cloves
  • 2 teaspoons dried oregano
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes
  • Flank steak

Directions

  • Make the chimichurri sauce by combining parsley, cilantro, garlic, oregano, red wine vinegar and red pepper flakes in the bowl of a food processor; season with salt and pepper, to taste.
  • With the motor running, add olive oil in a slow stream until emulsified; set aside 1/2 cup of the mixture in the refrigerator until ready to serve.
  • Add remaining sauce to a ziploc bag or dish. Add steak and turn to coat. Allow to marinate in the fridge at least 4 hours and up to overnight.
  • To cook, preheat a grill to medium high heat.
  • Remove steak from marinade and season with salt and pepper. Add steak to grill, flipping once until cooked to desired temperature, or about 6 minutes per side for medium rare. Allow steak to rest on the cutting board for 5 minutes before slicing to serve.

Cashew Chicken

I’m all about an easy sheet pan dinner these days. In the morning, we’ll get the sauce ready and then at dinner, it will just be a matter of cutting up some chicken and peppers, popping them on a sheet pan and baking in the oven until cooked through. A quick toss in the sauce (removed in the microwave) and paired with some quick cooking rice, and dinner is done!

Ingredients

  • 1 1/2 tbsp oyster sauce
  • 1 1/2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1/4 tsp onion powder
  • 1/4 tsp red pepper flakes optional
  • 1-2 tbsp corn starch
  • 2 cloves of garlic
  • 1/2 tbsp sesame oil
  • 1/2 to 1 cup chicken stock
  • For Dinner:
  • Chicken breast, diced
  • Red pepper, sliced
  • Cashews and green onion (optional) for serving

Directions

  • In a small bowl, combine first five ingredients and one tablespoon of corn starch.
  • In a small saucepan, heat sesame oil and garlic over medium heat. Cook 30 seconds, then pour in combined ingredients.
  • Whisk ingredients and slowly add in chicken stock. Cook over medium heat until thickened. If the sauce does not thicken, slowly add in additional tablespoon of corn starch. If the sauce becomes too thick, add additional stock.
  • In not using right away, store in a lidded container in the refrigerator and rewarm in the microwave.
  • For serving: line a sheet pan with aluminum foil. Drizzle with olive oil and spread chicken and peppers on the pan. Bake until chicken is cooked through. Toss in sauce and serve over rice. Top with cashews and scallions.

Taco Seasoning

Ingredients

  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

Directions

  • Mix together all spices.
  • Store in an airtight container or spice jar.
